You need to buy cows. Bulls cause a lot of trouble and are dangerous. Most places artificially inseminate. If you are getting into dairy cows, you want Holsteins or Jerseys. They produce the most milk. If it is beef cattle, you want Angus. They are the most popular breed and besides being known for excellent marbling they also have great maternal traits for reproducting which is very important in beef cattle or any cattle for that matter. P.S. Holsteins have unmatched milk production than any other cow whereas Jerseys are noted for the highest milkfat content of all dairy breeds.
